Often thought of as the poorer cousin of the Turbot, but thats unfair. Brill is a great fish in its own right. The white flesh is simple to eat off the bone and the fillets are firm enough to pan fry. The larger sized fish will feed as many as four and looks great as a sharing plate at a dinner party, roasted and served in the roasting dish - A real show stopper.
